Barred, opened in 2016 by brothers Mirko and Tiziano Paolucci, fashions itself after the type of wine bar one would normally find in Copenhagen, with such elements as a light wood interior, a kitchen that strives for zero waste and a strictly natural wine list. But in the tradition of the modern Roman trattoria (which includes a prevalence of dishes featuring offal), they offer a menu filled with dishes like eel, liver pâté, Jerusalem artichoke and licorice or pork rinds, mussels and lemon. Though some of the ingredent pairings seem random, the brothers possess sufficient talent to pull it off.
