Peruvian chef Martin Morales is responsible for introducing much of London to the joys of citrus-cured raw fish and pisco sours via two brightly colored, fun Ceviche restaurants in Soho and Old Street. Cordon Bleu–trained Daniel Ribeiro is now group head chef across both branches as well as four Andes-inspired Andina restaurants. Obviously, the sustainably sourced ceviche is king, but don’t miss other traditional Peruvian dishes, like the excellent lomo saltado (wok-fried beef with chips).
