Fat Duck maestro Heston Blumenthal is listed as “creator” at Dinner by Heston Blumenthal at the Mandarin Oriental Hyde Park. Executing the maestro’s vision since May ’23 is head chef Adam Tooby-Desmond, who’s worked his way up the ranks. The menu is inspired by historic gastronomy, best evidenced by the iconic Meat Fruit from c.1500, smoked chicken and salsify Salamagundy from c.1723 and Tipsy Cake c.1858 with spit-roast pineapple. The Hereford rib eye and triple-cooked chips hark back to c.1830, apparently. You can order Tignanello or Silex by the glass or a special bottle from the world’s most famous vineyards.
