Gilpin Spice, is one of three restaurants within the five-star, family-run hotel Gilpin in Windermere, in the Lake District National Park. In the open kitchen is head chef Aakash Ohol (Hrishikesh Desai’s former sous at HRiSHi), who oversees a freewheelingly fusion menu of pan-Asian flavors, such as edamame puri with mango chutney and togarashi spice; ChalkStream trout tartare with padums, pineapple gel and matcha powder; and Vietnamese-style braised Belted Galloway beef curry. The short global wine edit has bins from as far afield as China and Thailand.
