Kanada-Ya

The original Japanese Kanada-Ya was founded in Fukuoka Prefecture, the spiritual home of tonkotsu ramen, in 2008 by former pro keirin racer Kazuhiro Kanada. In 2014, Kanada-san brought it to London, opening the first site near Covent Garden. Kanada-Ya loyalists swear by the classic ramen with wood ear fungus, homemade noodles (available in gradations from soft to extra hard), 18-hour pork-bone broth and an optional chashu Burford Brown egg. The truffle version has its devotees too.
