Mario Payán runs what is considered the most authentic Japanese restaurant in Madrid. Working behind a custom-made 12-seat sushi bar fashioned from a huge marble slab allows Payán to have a direct dialogue with his guests. There is no menu: only the surprise nigiris that the chef places in front of you. Typically, your omakase will include between 15 and 20 dishes that are a mix of traditional and modern preparations. There are also a few tables opposite the counter where parties of four can dine.
