Michael O’Hare (aka Hairmetalchef) of The Man Behind the Curtain, within the Flannels designer clothing store in Leeds, is not the shy and retiring type, to judge by his food. His attention-grabbing presentations – part-Frank Gehry, part Jackson Pollock – pop on the plate. His Permanent Collection tasting menu of 10 to 14 “sequences” runs through his Spanish/Japanese inspired rock ’n’ roll repertoire, from the XO veal sweetbread in a scarlet slider bun to squid-ink-black Emancipation, his riff on fish and chips.
