Although most pizzerias now serve pizza on a plate, it originated as street food to be eaten with your hands. It was the upscale Vomero neighborhood that started serving it with a knife and a fork, a style that eventually found its way to the Spanish Quarter in the heart of the city. The famous Pizzeria di Matteo, located on Via dei Tribunali, still serves pizza fritta (deep-fried pizza) and pizza a portafoglio (literally, “wallet pizza,” because it’s folded in four, to be eaten with the hands). A living monument to an incredible tradition – for a ridiculously cheap price.
