Golf professional-turned-chef James Close is an ambitious force on the north-east scene. Entirely self-taught, Close trained his palate by eating at Europe’s top gastronomic addresses, an invaluable experience that has encouraged an outward-looking approach. From the open kitchen at the 200-year-old inn he acquired in 2009, he serves a daily tasting menu of up to 17 courses to just 26 diners. Highlights might include a petite crab taco, Kagoshima A5 wagyu sando or luxurious aged beef tartare with caviar.
