It has been 20 years since Bilbao native Nieves Barragan Mohacho took a job as the sous chef at Fino, the predecessor of the popular Barrafina group of restaurants. By 2007, she had risen to the position of head chef, and she spent the next ten years expanding the restaurant to four locations. In 2017, she opened a restaurant of her own, where a variety of tapas is served at the downstairs counter, while at the upstairs asador, she serves whole Segovia sucking pigs and Galician beef ribs that are cooked in a traditional wood-fired oven.
