Topa Sukaldería is Andoni Aduriz’s tribute to Latin American cuisine. It is the meeting point between Basque and Latin American gastronomy, a way to share recipes, stories, customs and flavors, all with the Mugaritz seal of approval. It’s a place where a group of fans can have fun enjoying well-thought-out dishes from the kitchen of New York native Jessica Lorigo. The fusion of these cultures results in dishes like tacos al pastor Basque style, Peruvian causa with spider crab or charcoal-grilled veal rib with chimichurri and potatoes à la Francis Mallman.
