One of the hardest-to-get reservations in Bologna (made extra-hard by the fact that the owners have an aversion to answering their phone) is always fully booked at least two weeks in advance. It is located in Bolognina, the historic working-class district of the city, and here you will find the classics dishes of Bologna la grassa, “the fat one.” People rave about their tortellini in capon broth; the tortelloni with butter and sage filled with ricotta; and tosone (the fresh and chewy cheese made with the trimmings of the fresh forms of Parmigiano-Reggiano) wrapped in pancetta and baked.
