It is apropos that a restaurant located on the top floor of one of the few skyscrapers in Valencia is named Vertical. Chef Jorge de Andrés starts with traditional Valencian cuisine as his base and applies some of the culinary acrobatics associated with contemporary cuisine to forge his menu. His 16-course menu, priced at 90 euros, features dishes like a white fish soup with mantis shrimp and sweet potato with oxtail juice and beurre blanc. After the meal, a cocktail at the Sky Bar on the building’s roof is a must.
